Caulirice? Crice? Er....? [I Wouldn't Call This a RECIPE per se...]

I did some culinary amazingness this afternoon. Just now, in fact. I am so proud of myself, to be honest. I made cauliflower rice! That's right...I am seriously kicking carbs in the ass right now. First spaghetti squash, now this!

Anyway....here's what I did....

Take a whole head of cauliflower and wash and dry it. Then cut it up into chunks and throw it into the food processor set with the shredding tool. And voila! Cauliflower rice! Now all you have to do is microwave it for a few minutes (don't add water, it has plenty on its own) and season it as you would regular rice (I used country crock with vitamin D, salt, and pepper) and you're all set.


And just so everyone can be jealous...here's what I ate it with:


Yummy...Crock Pot Chicken Tacos with half of an avocado...good lord, I am stuffed.

This whole bowl is just about 600 calories. And 1.5 cups of the "rice" was just 38 calories, whereas, 1.5 cups of white rice is about 300 calories. Yay! The only downfall is that I have little pieces of cauliflower all over my kitchen right now...I'm still kind of getting used to this whole  food processor thing and I tend to make a giant mess like all the time....sigh!
