A Breakfast That Wasn't a Failure [Recipe]


I made this this morning! Baked Apple Pie Oatmeal...holy crap, it was amazing. Sooooo good. Of course I changed it to fit what was in my pantry/my dietary "limitations":

1/4 honey instead of brown sugar
2 cups unsweetened original flavor almond milk plus 2 cups fat free evaporated milk instead of milk/heavy cream
1/3 cup egg beater egg whites instead of eggs
2 teaspoons apple pie spice instead of just cinnamon

I had some leftover evaporated milk so I just topped my oatmeal with that and It. Was. Fantastic. And very filling I might add. And Bubs liked it which is always amazing considering this child subsists on goldfish crackers, cheerios and raisins. It's always a pain in the ass to get her to actually eat anything. So, 1 point for mom! Yay!


My version was about 270 calories per serving not including any topping (recipe makes 6 servings):

Anyway, yesterday went well, meal-wise:

B: Nothing because my muffins were a failure
L: 2, 4 oz Tilapia Filets with Avocado Salsa and Fat Free Cottage Cheese
D: (when I got home from Bikram at 11pm) 1 1/2 Pork Chops (only about 5oz...they were thin) with Lightly Buttered and Peppered Broccoli Florets
Snack: After lunch I had a slice of the Deep Dish Cookie Pie
Ds: After Dinner I had a slice of the Deep Dish Cookie Pie (what? it's freakin' delicious!)
Ex: 317 calories burned doing Bikram Yoga

Not too shabby...I'm sure I'll do much better once all of this damn pie is gone. Haha!

So here's to going to yoga again tonight, and my sister coming to visit for the weekend! So exciting!!!!
