Ingredients:
- 2 1/4 cup Unbleached All Purpose Flour (this is what I had on hand...I need to finish this flour before I can move on and get Whole Wheat Flour that I prefer)
- 1/4 cup Truvia baking blend
- 3/4 cup tightly packed brown sugar
- 1/4 cup Chobani 0% Plain Yogurt
- 1/2 cup butter/margarine, softened (I accidentally melted mine, but it was fine)
- 3/4 cup liquid egg whites
- 2 teaspoons coconut oil (I read that if you are substituting egg whites for whole eggs when baking, you need to add a little bit of oil to make up for the missing liquid...hence the coconut oil)
- 1 small package of sugar free, fat free butterscotch pudding mix
- 1 tablespoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 2 cups chocolate chips (to make it a little more healthy, I would probably only use 1-1 1/2 cups next time...they just won't be as chocolatey which is fine with me...I'm slowly falling out of love with chocolate these days)
- Preheat oven to 375.
- Mix flour, pudding mix (just the dry mix...don't actually make the pudding), baking soda, and salt in one bowl
- Beat Truvia, yogurt, butter, and vanilla together thoroughly, then add egg whites slowly. Add coconut oil and brown sugar.
- Pour wet ingredients slowly into dry and beat on low until completely mixed.
- Add chocolate chips.
- Drop by spoonfuls onto baking sheets. This recipe SHOULD make 36 (3 dozen) cookies, however mine only made 24 because I made bigger cookies. Bake for 9-11 minutes.
- Let cool....devour.

Half the Chocolate (my recipe): 95 calories per cookie (36 cookies)
So, it's not that big of a difference, but with no white sugar and the added protein from the Greek yogurt as well as the healthy fats from the coconut oil and the lower cholesterol from using just egg whites instead of whole eggs, I still think it's a good alternative. Give it a try and see how you like it!!!
