Cauliflower Mashed "Potatoes" [Recipe]

This one is definitely a keeper, and its really simple as well! I adapted it from this blog and the picture is courtesy of her!



Ingredients
  • 1 head of cauliflower, rinsed, dried, chopped into bite-sized pieces
  • 2T Fat Free Evaporated Milk
  • 1T Butter (I used Country Crock with added Vitamin D -- it's only 50 calories per tablespoon)
  • 2 oz of SHARP (I mean REALLY sharp) cheddar cheese of choice
  • 1t Salt (if you decide NOT to use EXTRA SUPER SHARP cheese)
  • 2t Minced Garlic
Directions:
  1. Place cauliflower pieces in microwave-safe bowl, add butter and milk and micromave on high for 5 minutes
  2. Stir to coat the cauliflower with the butter/milk. Microwave on high for another 4 minutes
  3. Placed cheese, garlic, salt and cauliflower/butter/milk mixture in food processor and blend until smooth.
  4. Enjoy with reckless abandon because it's only 395 calories for the WHOLE thing.
So I ended up using 2/3 cup Weight Watchers Mexican cheese blend to save some calories which is obviously not extra sharp cheddar, so that's why I added the salt. If you use really sharp cheese, the salt shouldn't be necessary.

Not too shabby...and it was so smooth and creamy and tasted just like mashed potatoes to me! Try it! You'll like it! And if not, tell me why and how to change it!
